At 5 meters below the surface and on the southernmost tip of Norway is an oblique slab that will make you inquisitive of what’s inside. Go closer, or better inside, you are warmly welcomed to a masterpiece in architecture, a fine dining concept restaurant designed in the most simplistic and enriching style. Since its opening in March 2019, Under is fully booked for the next six months. We are not surprised what makes this unique under the sea landmark, a must visit among select luxury travelers.
Guests will relish on an elaborate 18 course gourmet course while watching over the colorful wrasses, pollack, cods, mini sharks and the occasional sightings of the seals from its wide glass window to the marine life. The restaurant ‘Under’ will feature unique and classic Norwegian delicacies, including fresh seabirds catch and wild sheep from the coast, buffet tagged at $260 and wine pairing menu at $400 plus taxes.
Chef Nicolai Ellitsgaard assures guest of uncompromising taste as he notes, “Fresh ingredients and pure, naked flavors are of utmost importance to us. At the same time, we want to provide a unique dining experience that ushers our guests beyond their current comfort zone.”
Under has been designed by the award-winning architect firm, Snøhetta, leaving the structure 24 metres, sunken under the sea, with its rough walls attracting the formation of coral reefs, limpets, kelp and hundreds of vibrant sea creatures. With the changing weather conditions, the restaurant will offer diverse views and experiences, from crystal clear sightings of the marine life to the stormy chopy seas of the icy Atlantic, you are sure to witness breathtaking sights.
